Zoodles for Kids

Zoodles with Marinara & Basil
Serves: 4

Ingredients
4 medium to large zucchini
1½ cups store bought or homemade marinara (I recommend Rao’s)
¼ cup chopped or torn basil
¼ freshly grated parmesan (optional)

Directions

  1. ​Make zoodles out of the zucchini using a spiralizer. If you do not have a spiralizer, you can use a julienne peeler or make ribbons using a regular vegetable peeler.
  2. Heat marinara sauce in a medium saucepan on the stove over low-medium heat.
  3. While sauce warms, prep the basil and parmesan.
  4. Add zoodles to the pot with sauce and toss until well coated. Let cook for just 2-3 minutes.
  5. Top zoodles with parm (if using) and basil.
